My Oatmeal Shortbread Story
My husband had a heart attack 10 days before his 38th birthday 4 years ago. He had to have an angioplasty immediately. (Yes, nowadays you don't have to wait until retirement age to have a heart attack).
As much painful experience as it was for me I found there was a blessing behind that incident. He stopped smoking right that moment (I waited more than a decade for that!) and never had a puff since (as far I knew). Also, as a family we became more conscious of our diet.
My husband loved to snack on junk foods. He still loves to snack after the heart attack but he became more selective. Besides dry fruits and yogurts, I decided to try an oatmeal shortbread recipe that I found in an old recipe book - high fiber, low sugar, egg free, to be included as one of his snacks.
As a result, not only he reluctantly admitted the shortbread is edible (unlike my other venture), but my kids and siblings love it too. Not to mention my office mates.
Then I decided pack and market them to friends and family. (Yup, tired of having to bake for them for free after some time you know...)
So, that was the humble beginning of Kusen Snacks. I will continue to venture into other healthy snacks. There are several plans in the pipeline.
Well, as you go through my blogs some of my snacks may not carry as much health benefit as the oatmeal shortbread, but I still make them due to popular demand from the children, neighbors and friends. (Sorry hubby, they are not for you).
